Are you tired of hearing, “Breakfast is the most important meal of the day”? Well sorry, but you’re going to hear it again; breakfast really is the most important meal of the day. I recently went to a conference that stressed the importance of children eating breakfast for academic success. The main point was that kids’ brains need food in order to function properly and think clearly. Without breakfast, children won’t achieve their academic best. The same holds true for adults. Although the brain is small, it uses 20% of your glucose/food supply to function normally, and therefore, it needs to be fueled like any other muscle. There’s also a multitude of other reasons to eat breakfast, such as:

  • Eating breakfast prevents overeating later in the day.
  • Eating breakfast helps your body obtain proper nutrients and will make you feel more energized.
  • Eating breakfast revs up your metabolism. Without breakfast, your body may enter starvation mode in which you will store fat.

It’s been proven time and time again that breakfast is essential for maintaining good mental and physical health, so why do so many people choose to skip this important meal? Two reasons I’ve heard cited often are lack of time and lack of appetite in the morning. My Overnight Apple Cinnamon Walnut Oats rectify both of those problems by being ready to eat when you wake up and tasting irresistibly delicious. Oatmeal is my favorite breakfast, but I don’t always have time to go through the whole process of cooking whole grain oats in the morning. These oats cook overnight in a mason jar and are ready after a minute in the microwave the next morning. Give it a try and you will be thoroughly pleased by how quickly you can whip up a healthy and delicious breakfast.

Makes 2 servings

Ingredients:

1 chopped apple—choose your favorite variety

1 cup whole grain oats

½ cup water

½ cup milk

1 teaspoon of cinnamon

Walnuts

Brown sugar (optional)

Directions:

  • Do this step the night before: Place the oats, water, milk, cinnamon, and chopped apple in a mason jar or tight closing Tupperware. Shake the jar or container until all ingredients are mixed. Put in fridge and leave overnight.
  • In the morning, the oats should have soaked up the water and milk. Take out as much as desired and place in bowl. Add a drop of water and microwave for 1 minute. Top with walnuts and a drop (1/2 teaspoon) of brown sugar.
  • Enjoy a nutritious breakfast in a flash!

Nutrition Notes:

  • Oatmeal is a good source of fiber and iron. Most whole grain oats contain about 15% the daily value of fiber and 10% the daily value of iron.
  • One medium apple has 95 calories and 17% daily value of fiber. The fiber is in the skin, so be sure to eat the delicious peel!
  • One apple contains 15% daily value of Vitamin C to help fight off those change of season colds.
