I’m so excited to say that I’m moving to a new apartment at the end of this month. The apartment I’m in now is okay, but let’s just say that it isn’t great. I moved here when I was in grad school, so I like to call it a “budget apartment”. And one of the humongous downsides to having a budget apartment is that I don’t have a dishwasher. Can you imagine washing every single dish by hand? Yes, since part of my job is creating recipes, not having a dishwasher is quite problematic.
But one of the other things that I’m most looking forward to in my new apartment is that it’s a 50-story building with a huge rooftop with 6 state-of-the-art grills! I live in NYC, so being able to cook on an outdoor grill is pretty rare.I’m so overly excited about this that I already started testing out recipes on my indoor grill. This grilled salad was created with the excitement about my new apartment grill in mind. It includes the two best ingredients of summer–corn and cherry tomatoes. I grilled up the romaine because, quite frankly, I saw it in a magazine and wanted to try it. It turned out pretty good, but you can also substitute fresh romaine. However you change up this recipe on your own, there’s one thing you NEED to do–char the corn. It gives this smoky flavor that is to die for. Not to mention that it’s topped with an avocado cream dressing that is a bit tangy, limey and creamy. Whip up this quick and unique dish for your next backyard BBQ to impress your guests.
