Piña Colada Smoothie Bowl

I decided to embark on a little adventure for a recent article I wrote for Shape.com. I’ve seen many pictures of these awesome coconut bowls on Pinterest, and I’ve been wanting to try this foodie trend. So I pitched a recipe to Shape, and they went for it. I’m a pretty proficient food stylist (see my Cherry Coconut Yogurt Bites), so I thought that re-creating this coconut bowl would be a piece of cake. Boy, was I wrong!

Pina Colada Smoothie Recipe

I really wanted to buy a pre-cut coconut, but, of course, my supermarket didn’t have any. Instead, I bought a whole coconut (I was outraged that it was $3- ha), and I knew that the Internet would help me figure out a way to open it. I was right–good old Martha Stewart shares a really helpful video to get these tropical fruits open.

I got the water out of the coconut with ease. But getting it open was a whole different story. Just like the video said, I roasted it for 20 minutes and saw cracks along the side. But when I hit it with a chef’s knife, nothing happened. So I popped it back in the oven and heated it for another 10 minutes. Then I started in with the chef’s knife again, and I finally saw more cracks start to form. Eventually I was able to pry it open, but I ran into a small problem. It didn’t crack open in the middle. Instead, it was kinda lopsided and wasn’t the best vessel for holding a smoothie.
