Here’s a loaded question…Are you ready for the holidays? Admittedly, the holidays are not a very stressful time for me (don’t hate me for saying that). I think it’s because I don’t have any kids, so I get to enjoy some time off, cook to my heart’s content and bask in the glory of my birthday (December 18th), Christmas and New Years.
Speaking of my birthday, I got the best food blogger gift I could hope for–a macro lens for my camera. This things takes incredible close up shots, and I actually spent the entire afternoon of my birthday taking photos of random things around my apartment. Here are a few of my favorites.
Now for your recipe. It’s time for The Recipe ReDux, and this year’s theme is to makeover a recipe from a favorite cookbook with any numbers that correlate with 2017. I took a little bit of liberty with this one and chose page 107 from an awesome new cookbook written by two Dietitian friends, Liz Shaw of Shaw’s Simple Swaps and Chef Sara Haas. The Fertility Foods Cookbook: 100+ Recipes To Nourish Your Body While Trying To Conceive contains a variety of simple and delicious healthy recipes that give your fertility a boost. Now, I’m not trying to have a baby right now (sorry Ma), but I do love a good cookbook with easy recipes, and I LOVE LOVE LOVE that each recipe has a note about the “Fertility Focus”, aka what makes it great for fertility.

The recipe I chose is on page 107– a white bean & rosemary spread. The book explains that white beans are a good source of a mineral called molybdenum, which is important for making and activating many detoxifying enzymes in the body. I actually never knew that, and I love learning new nutrition tidbits from fellow RDs.
As for the recipe, I changed things up slightly. There really isn’t any way to make this recipe healthier since it was created by two rockstar Dietitians. But I’m not a huge fan of rosemary, so instead, I threw in mint and crushed red pepper to add some spice with a refreshing twist. The end result is a quick and delectable spread that you can keep on hand for a protein-rich afternoon snack or put out with any holiday party platter.

Spicy White Bread Dip
Recipe Adapted From The Fertility Foods Cookbook
- 1 can 15 ounces white navy beans, rinsed and drained
- 1 tablespoon fresh lemon juice
- 3 tablespoons olive oil
- 1 clove garlic peeled
- 1 teaspoon fresh mint leaves
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon salt
Place beans, lemon juice, olive oil, garlic, mint leaves, crushed red pepper and salt in a food processor.
Process for 2-3 minutes, then remove lid and scrape down sides of the bowl with a spatula.
Pulse an additional minute, or until desired texture is reached.
