Honey Lime Roasted Carrots

These sweet and tangy carrots are so yummy that they will please every veggie-hating picky eater in the house!

  • 6-8 medium carrots about 1 bunch, washed, unpeeled, sliced
  • 1 tablespoon fresh lime juice
  • 3 tablespoons vegetable or canola oil
  • 1 tablespoon honey
  • 1/4 teaspoon of salt


  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, whisk together lime juice, oil, honey and salt until well combined.
  3. Put the carrot slices in bowl with honey-lime mixture and toss to coat.
  4. Place on a baking sheet and cook for 30 minutes
